I like to make it count when I use the smoker. I mean you're there for the long haul, anywhere from 4 to 16 hours and sometimes longer. And if you're going to commit to that amount of time, you may as well get a lot out of it. So when we made Homemade Smoky Southwest Bacon, I also made sure to have some other things that could be smoked simultaneously. I had some wings in the freezer, and wasn't sure what I wanted to do for dinner. But Smoked Chicken Wings sounded mighty good when you're sitting there smelling that meat smoking. That's how Smoked Chicken Wings With Bourbon Hot Sauce came about. Well the smoked wings part anyway. The sauce was a sheer mishap. I didn't want to cheap out and get some store-bought stuff, so I thought I would just throw together a sauce. Only, it didn't work out very well at all. My balances were way off in the beginning. But after adding a little of this and that, and a healthy dose of bourbon, I ended up with a lip tingling-ly good sauce.

1 lb.

chicken wings, split

3 tbsp.

Cattle BoyZ Big Country Garlic Seasoning

1 package

wood chips, soaked 30 minutes

Bourbon Hot Sauce

1/2

onion, minced

1clove

garlic, grated/minced

1

chili, minced,
(use your favorite to choose the heat)

1 tbsp.

bacon fat

3/4cup

molasses

1cup

ketchup

1 tbsp.

red wine vinegar

1 tbsp.

soy sauce

1/3 cup

bourbon

sriracha or sambal olek to taste (optional)

Method

  1. Preheat your smoker to 200 to 220°F. Soak wood chips, your favorite flavor, we used apple, but mesquite or hickory would be just as good.
  2. Toss the wings in Big Country Garlic, and chilli flakes.
  3. Place the wings on the grids with at least one inch apart to allow for maximum smoke penetration.
  4. Smoke the wings for about 2 hours, turning them at least 3 times, and replenishing the chips as needed.
  5. For the sauce. Melt the bacon fat in a saucepan. Add the onion and chilli. Once the onion is translucent, add the garlic and cook for another minute.
  6. Add the molasses, ketchup, vinegar, soy sauce and bourbon. Bring to a simmer for at least 5 minutes. Taste and adjust the heat by adding sriracha, or honey to cool it down a little.
  7. Preheat your grill to 400°F.
  8. Toss the smoked wings in the sauce. Grill the wings for 5 minutes over direct heat, until heated through. Serve immediately with wet napkins and a good drink.

Basically these Smoked Chicken Wings With Bourbon Hot Sauce were so good, that even people who have had a fulfilling meal at their mom's house just before coming over, have eaten nearly 8 wings in 5 minutes because they're "Just so good!". Yeah, they didn't last long, but you will definitely want something to ease the heat a little. Cold milk, creamy blue cheese dressing, something like that. What's your favorite hot thing to eat?
