Papas con chorizo is a Spanish recipe that translates to potatoes and sausage, but this is so much more than your average sausage and potatoes recipe! Smoky Spanish or Portuguese chorizo sausage is mixed with potatoes and tossed in a seasoning blend of sweet paprika, garlic powder, and earthy chili flavors. The flavor is incredible.

This is a one-sheet side dish, which means all you need to do is toss the ingredients together, add them to a sheet pan, and roast it in the oven!

The best part of this recipe is when the drippings from the sausage mix with the potatoes, which crisps up nicely for a perfect golden color. I like to serve this as a side dish with seafood and grilled meats!

My recipe for papas con chorizo is not only a fabulous side dish to share, but it also works great as an appetizer for a dinner party. Serve with toothpicks on the side and a fabulous dipping sauce (peri-peri sauce is my favorite) and it becomes an excellent crowd-feeding recipe!

Look for popular Portuguese chorizo sold by brands like Goya, which are typically available as sausage links in most major grocery stores. You need hard chorizo links for this recipe, not ground chorizo. If you can’t find Portuguese chorizo links, logs of chorizo work just as well.

How to Make Papas Con Chorizo

  1. Preheat oven to 375ºF. Remove the casing from Portuguese or Spanish chorizo and slice into ¼ inch medallions.

  2. Slice fingerling potatoes into ¼ inch slices.

  3. In a bowl, mix olive oil with garlic powder, paprika, and chili powder.

  4. Add the potatoes and chorizo to the bowl and toss with the olive oil mixture until fully coated. If you don't have a bowl large enough you can also mix right on the baking sheet.

  5. Place the potato and chorizo mixture on a sheet pan and bake for approximately 45-50 minutes or until the potatoes are crispy on the outside.

  6. Remove from the oven and serve with a small bowl of peri-peri sauce. You can also mix the peri-peri sauce in with the potatoes. Sprinkle with green onion slices and lemon juice, and garnish with lemon slices. Enjoy!

Papas con Chorizo and Eggs

  1. Slice 2 medium red bell peppers into thin slices with 1 medium yellow onion.
  2. Add the red bell peppers and onions to the potatoes and chorizo and toss with the seasoning blend.
  3. After the potatoes, chorizo, and vegetables have roasted cook 4-6 extra large eggs in a separate frying pan according to your liking (I gauge this by how many people I am serving).
  4. This recipe works great with scrambled, poached, or fried eggs! Serve the eggs right on top or mixed in with the papas con chorizo for a savory breakfast side dish.

Mediterranean Papas con Chorizo

  1. Before tossing the potatoes and chorizo in the seasoning mix, add one small sliced red onion, 6 ounces of artichoke hearts (drained or thawed), and ½ cup sun-dried tomatoes.
  2. Roast the veggies, potatoes, and chorizo together as instructed. After the papas con chorizo has roasted, squeeze 1 tablespoon fresh lemon juice over the cooked papas con chorizo as well as a quick drizzle of olive oil (about 1 teaspoon) and 1 teaspoon dried oregano.
  3. Toss together with a spatula. Place the papas con chorizo back into the oven and roast for 5 minutes longer.
  4. Before serving the papas con chorizo, sprinkle with crumbled feta and tzatziki sauce on the side.

  • 2.5 pounds fingerling potatoes I love using white purple and red in this recipe
  • 4 Tablespoons olive oil
  • 1.5 Tablespoon garlic powder
  • 1.5 Tablespoon paprika
  • ½ teaspoon chili powder if you want to kick up the heat feel free to add more!
  • ½ cup Peri-Peri Sauce
  • 1 lemon
  • 3 green onions sliced thin
  • toothpicks to hold the appetizer together, optional

Instructions
