Flavor, Texture, Crunch!

There are SO many things I love about these! The peanut butter flavor. The chocolate drizzle. The melt-in-your-mouth deliciousness. And a light crunch that I CANNOT get enough of.

UPDATE: This recipe was originally published back in 2017 and since then it has become WILDLY popular on Pinterest and Facebook making it one of my most POPULAR recipes for many years in a row! NO COOKING SKILLS NEEDED

I LOVE how stupid easy these are to make. Melt together a few ingredients. Stir in walnuts. Pour on a plate, give it a little drizzle, pop it in the freezer and voila! No expertise in the kitchen needed. In fact, it's a great recipe for kids to make!

And makes a healthy snack-- full of protein and healthy fats, not to mention the other loads of vitamins and nutrients in each of the ingredients. And it provides all that without an overdose of sugar. #momwin

My Recommended Peanut Butter

If you're just starting out with low-carb or a keto diet, check the label of your peanut butter. You may be in for a surprise! Even "natural" peanut butter can have added sugar.

Look for a peanut butter brand with just ONE or TWO ingredients. That's all you need: dry roasted peanuts and salt. Nothing else is necessary or beneficial.

My personal favorite brand in terms of quality, taste, and freshness is Aldi. Their Simply Organic brand of peanut butter is wonderful. I love that it's organic so it has fewer pesticides.

And the taste is DELICIOUS. The best by far that I have tasted (and I've tried many!) It's also super affordable - around $3-5 depending on where you live. Much cheaper than other brands!!

If you don't have an Aldi near you, check out Target and Whole Foods' store brands of pb. Theirs are great, too!

Sweet + Salty

What's your favorite sweetener? If you love stevia like I do, go for it! I sweetened these with just a dusting of pure stevia powder... literally like a little white breath or cloud, lol. That stuff is strong and you don't need much.

Sweetener Options

If you prefer another sweetener, the recipe is FLEXIBLE. It's a super simple swap for monkfruit drops, a little powdered monkfruit, powdered coconut sugar, or another powdered sweetener of your choice. Just don't forget to taste before setting it in the freezer.

How to Bring out the Flavor

And don't forget the SALT. Did you know adding salt actually enhances the sweetness of foods, too? Especially chocolate! Himalayan Pink Salt is my absolute favorite. It's like a whole new level of flavor. Once I tried it, I will never go back to regular bleached salt again.

How to Store No-Bake Keto Bark

This is important! The key ingredient in this bark is coconut oil. Since it solidifies when chilled, it holds the bark together. (Otherwise it's just a thick liquid!)

So this bark must be kept refrigerated, but preferably FROZEN at all times. If you make your bark on the thin side, it will melt quickly if left out in a warm room.

However, if your bark melts, no worries, just pop it back in the freezer to firm up again. It's not ruined! 🙂

Ingredients

US Customary - Metric

PB Bark

  • Heaping ¼ cup natural peanut butter - (I use Aldi organic. It's just peanuts and salt)
  • ¼ cup coconut oil
  • 1 teaspoon vanilla
  • Pinch of pure stevia powder - (or 8 drops sweet leaf vanilla stevia drops, or 1 Tbs powdered coconut sugar or sweetener of choice)
  • 1 cup chopped walnuts
  • Pinch of Himalayan pink salt

Chocolate Drizzle

  • 1 oz 85-90% dark chocolate - Lily's or your preferred brand
  • 1 teaspoon coconut oil

Instructions

To make the bark:

  • Line 2 plates with parchment paper (Don't skip this part or it will stick like crazy!)

  • Melt together peanut butter and coconut oil in a medium bowl (I did 30-40 seconds in the microwave).

  • Add remaining ingredients and stir. Taste and adjust for sweetness.

  • Pour half of the mixture onto each plate.

To make the drizzle:

  • Melt the chocolate and coconut oil together in a small bowl (20 seconds in the microwave usually works).

  • Use a spoon to drizzle the chocolate on the bark.

  • Freeze for 30 minutes or until completely hardened. Transfer to refrigerator. Enjoy!

Once hardened, store these in an air-tight container/ziplock bag in the refrigerator (or freezer). Must be kept cold since they melt at room temp.

    BLEACHED SALT... WOW your really trying to push the affiliate for Himalaya pink salt. And while I am at it, Sea Salt, Almost ALL salt west of the Rocky Mountains in the USA IS SEA SALT!! It had just been evaporated and then dried to purify it.
    IF you think I want to eat a product with BIRD Poop in it. Think again.

      ?? I mainly just love the flavor of pink salt. But you are free to use whatever you like. Bleached "table salt" is completely different than sea salt.

      Table salt is "Heavily processed to eliminate trace elements, table salt is mined from underground salt deposits and is bleached, heated and contains an additive, calcium silicate, to prevent clumping. Imparting a “sharper” flavor than kosher or sea salt, its fine crystals are considered *saltier than kosher salt."

      Himalayan Pink Salt-- "Known for its purity and and mineral content, ... has a lovely soft flavor that imparts none of the sharpness that can come with heavily processed standard table salt."

          Macros are macronutrients: protein, fat and carbs. You can track the, using an app or website like MyFitnessPal.com by entering your food. 🙂 Generally on keto, you want to keep your net carbs very low ~20 grams per day.

      3 C - 1 Fiber = 2 net carbs

      You could try refined coconut oil, which has no taste. Other than that, palm oil or butter could work, but may not have the same crunch. Might be great, though! 🙂 If you try a variation, please let me know how it turns out.

          The oil needs to be one that solidifies when chilled, so canola wouldn't work. To sub butter, use the same amount of oil. You could also use cacao butter or palm oil. Hope that helps! If you try it, please let me know how it turns out 🙂

          Hmm, I'm not sure. I have only used ghee a couple of times and I didn't refrigerate it, so I don't know how much it hardens when chilled. But maybe! You could try a smaller batch and see how it goes and what it tastes like. I bet it would be good! Buttery for sure 🙂

    If I wanted to make larger quantities of this for a party (for seriously like 150 people as an addition to a dessert table), is it easy to just multiply the recipe to make more? Or should I keep it to the one batch at a time for consistency? (And if you have any other ideas for keto treats to add to a holiday party table, please share!)

      Hey Aimee,
      Yes you can multiply it, but you may not need as much stevia. I would add less and taste as you go.

      For a party, keep in mind that bark does melt at room temp. It can only sit out a few minutes. I wonder if putting it on a tray packed in ice would work?

      Other recipes that are perfect for a holiday dessert table: my truffles, bites and cake balls. I love the pumpkin spice cake balls! And the cookie dough. Prettypies.com/tag/bites most are keto or can be modified to be. Hope that helps! Let me know if you have any other questions.

    How much pyure would you suggest in place of stevia drops?

      Hi Kris, unfortunately I've never used pyure, so I can't say for sure.

      But I would start with the equivalent of 2 Tbs sugar, then taste and add a little more if needed.

      For granulated sweeteners, blend them into a powder first (I use a personal size blender - blend about 30 seconds)

    What if u added a bit of melted paraphernalia wax. That would help them set better and not melt as quick. Would that affect keto. No sugar or carbs but I’ve used the wax in normal cook recipes and it helps set choc. and peanut butter stickiness.

    Oh and about pink salt? I will never go back to regular table salt either. I order my Himalayan pink salt from amazon and i use it in everything! Makes all my dishes taste better. Even plain hard boiled eggs w salt. NOT the same w the usual table salt.

    I’m getting ready to make these for the first time. They look great. I noticed in the comments that you recommended palm oil as a replacement to coconut oil. Please don’t do that. The harvesting of palm oil is devastatingly tragic. It's likely that you don’t know about what happens. Here’s a post you can check out for info. Peace.

      One piece, if you break the bark into 18 pieces.
      You can make the pieces smaller if you want them to be lower cal.

      Homemade Chocolate Drizzle
      2 Tbs coconut oil
      2 Tbs cacao
      1 Tbs coconut milk
      10 drops Sweetleaf vanilla creme stevia to taste
      1 tsp vanilla
      Pinch of pink salt

      To make it, melt all ingredients together and whisk smooth.

    This was no good, I couldn’t even hold it in my hand to eat without it melting into a mess on my hands. It needs a more stabilizing ingredient like cocoa butter instead of coconut oil. I would not recommend this recipe to others.

      Oh no! I wonder what happened?? Did you freeze it? It must stay refrigerated or frozen or it melts. I (and many others) have made it countless times and it turns out great-- crisp and solid! Sorry yours didn't work for some reason 🙁 But I would just pop it in the freezer to firm it up.

      I would probably just sub butter. Coconut milk would probably make it too soft - unless you wanna eat it with a spoon like pb pie filling 🙂
